It's been a while, we were hibernating for the winter, finally have something to post. I improvised this recipe for Easy Vegan Banana Muffins.  They turned out great with just FOUR ingredients!  Well, five if you include the dark chocolate chunks I put in half of them cause I'm not a chocolate kinda girl.  I think they'd taste great with some coconut mixed in.  Maybe next time I'll add a bit of vanilla or almond extract...

They turned out light and airy, not too sweet, and low-fat to boot!

Easy Vegan Banana Muffins makes 30 mini muffins or 12 regular muffins
  • 5 ripe medium-size bananas
  • 1/3 cup brown sugar
  • 2 cups Bisquick mix
  • 1/3 cup soy milk (dairy will work too)
  • Handful of chocolate chunks or pecan halves (optional)
  • 1 cup shredded coconut (optional, if using sweetened coconut, reduce sugar to 1/4 cup)
  1. Preheat oven to 400 degrees.
  2. Lightly mash the bananas and mix in sugar and milk.
  3. Fold in Bisquick, do not over mix. If using coconut, add it in now. 
  4. Be sure to use a non-stick pan or paper liners as there is no added oil.  If using chocolate or nuts, poke them in the top of the batter after muffin tin is filled.
  5. Bake 15 minutes, or until they pass the toothpick test.
